Thumbprint Cookies with Pepper Jelly Jewels

These thumbprint cookies are crunchy on the outside, with a soft chewy inside that holds a jewel of bright Grey Goose Gourmet pepper jelly. The contrasting sweetness of the cookie with the slight punch of heat from the pepper jelly fuse for a unique and have-to-have-one-more flavor.

Ingredients

1/4 c. of Grey Goose Gourmet Pepper Jelly

1.5 sticks unsalted butter

1/4 c. powdered sugar

1/4 tsp. salt

1/2 tsp. baking powder

1 tsp. ground cardamom

1 c. flour

3/4 c. maple brown sugar instant oatmeal

1.5 c. of your favorite granola (optional, for added crunch)

Directions

In a large mixing bowl, cream butter for one minute.

Add sugar and beat for another minute.

Add egg and beat for about two minutes, or until mixture is fluffy.

Add instant oatmeal, salt, baking powder, cardamom, and flour. Mix until just incorporated.

Cover and chill for at least an hour, or overnight.

If opting to use granola: pour granola into a shallow bowl or plate.

Form cookie dough into 1” balls. Optional: roll into granola, pressing granola firmly into dough.

Place 2” apart on sprayed/lined cookie sheets.

Preheat oven to 350º.

Using thumb, create an indentation in dough ball and fill with 1/4 tsp. of GGG pepper jelly.

Bake for 12 minutes of until bottoms are golden-brown!

*Makes around 40 cookies.
